    Easy Dinosaur Cupcakes

    We love having little themed birthday parties and the dinosaur party that I threw for my eldest was a huge smash. But, let me tell you that I'm not a fantastic cake decorator I can manage to frost cakes and create some cute designs with royal and fondant icing but not much more so easy cupcakes are my best. These dinosaur cupcakes were fun to make, the kids loved them and using little dinosaur cake toppers made them so easy to make. So I thought I would share them with you. So here you go our easy to make dinosaur cupcakes.

    Dinosaur Cupcakes

    There were simple to make some chocolate candy rocks, buttercream frosting, dinosaur toppers and a simple chocolate cupcake (yes we made them from scratch but you could easily use a box or even buy a set as well!).

    Easy Dinosaur Cupcakes

    Yield: 22 Cupcakes
    Prep Time: 20 minutes
    Cook Time: 22 minutes
    Total Time: 42 minutes

    An easy and simple recipe to make some dinosaur-themed chocolate cupcakes for a roarsome party.

    Ingredients

    For the chocolate cupcakes:

    • 1 C flour
    • ¼ C unsweetened cocoa powder
    • ¾ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp kosher salt
    • ½ Light brown sugar
    • ½ C sugar
    • ⅓ C canola oil
    • ½ C buttermilk
    • 1 large egg
    • 1 tsp pure vanilla extract

    For the vanilla frosting:

    • 1 C unsalted butter, softened to room temperature
    • 3 C powdered sugar
    • 3 tbsp. heavy whipping cream
    • 1 tsp. vanilla extract
    • leaf green food coloring
    • 1 piping bag fitted with a #133 tip
    • chocolate candy rocks
    • ¼ C light brown sugar
    • 1 package of Dinosaur cupcake toppers

    Instructions

    Chocolate cupcakes:

    1. Preheat oven to 350°F.
    2. Line your cupcake pans with cupcake liners and set aside
    3. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt, whisk to combine.
    4. Add in the sugar and brown sugar stir until combined.
    5. Add the oil, buttermilk, egg, and vanilla extract.
    6. Stir until combined.
    7. Pour the batter in the cupcake liners.
    8. Fill each one ¾ of the way full.
    9. Bake for 22 minutes.
    10. Remove the cupcakes from the oven.chocolate cupcakes in a cupcake tin out of the oven
    11. Transfer the cupcakes to a wire rack to cool

    To make Butter Cream frosting:

    1. In the bowl of a standing mixer, cream together the butter, powdered sugar, vanilla, and heavy whipping cream until combined and smooth and stiff peaks form
    2. Mix in a few drops of Leaf Green food coloring until combined.
    3. Scoop frosting into a piping bag
    4. Pipe grass onto the cooled cupcakes
    5. Place a Dinosaur topper into the middle of the frosting
    6. Randomly place chocolate-covered rocks onto the frosting
    7. Sprinkle a little bit of brown sugar onto the frosting to make it look like dirt.
    8. Enjoy!
