Rolo Brownies With Brownie Mix
Sometimes you need to save time in the kitchen and wow the kids, and this easy recipe using a box of Brownie Mix is great. It takes a simple Brownie to the next level.

With a homemade chocolate ganache and salted caramel over the top they are extra special but with the box mix so quick to make as well.
The kids will love biting in and discovering the sweet caramel center of the Rolo as it melts in their mouths.
Ingredients for Simple Rolo Brownies
- Brownie Mix and ingredients for making up according to the mix
- Rolos
- Chocolate chips
- Heavy Whipping Cream
- Caramel sauce (Optional)
How to Make Rolo Brownies from Brownie Mix
- Preheat the oven to 350F and line a 9×13 baking pan with parchment paper
- Prepare the brownie mix according to the packet
- Pour half the mix into the baking dish and place the Rolo’s over the top.
- Add the rest of the brownie batter on top.
- Bake in the oven for around 35-45 minutes
- Cool completely
- Melt the chocolate chips either in the microwave or in a heat proof bowl on top of a saucepan on the stove.
- In a small pan, heat the heavy whipping cream until it starts to simmer and steam.
- Pour the cream over the chocolate chips and wait 1 minute.
- Use a whisk and mix until smooth.
- Pour this ganache over the cool brownies.
- Place the baking dish of brownies in the fridge for at least 2 hours.
- Remove and lift the brownies out of the dish and then cut.
- Optionally drizzle from caramel sauce over the brownies.

Delicious Rolo Brownies Recipe for Valentine's Day
Easy Rolo Brownies Recipe to make for Valentine's Day using boxed Brownie Mix so it's quick easy and no fuss.
Ingredients
- 1 packet of Brownie Mix (read the instructions for the number of eggs, oil and water)
- eggs
- oil
- water
- 1 bag of Rolo, half unwrapped
- 1 Cup semi-sweet chocolate chips
- 1/2 Cup heavy whipping cream
- 1 container of caramel sauce
Instructions
- Preheat the oven to 350 degree's and line the 9x13 baking dish with parchment paper
- Follow the directions on the back of the brownie box to prepare the brownie batter with the eggs, oil and water.
- Pour half of the batter into the baking dish
- Place Rolo's all over the top of the brownie batter
- Top the rest of the brownie batter onto the Rolo's
- Bake in the preheated oven for 35-45 minutes or until a toothpick comes out clean
- Allow to cool completely
- Using a heat safe bowl, place the chocolate chips into the bowl
- Using a small sauce pan, heat up the heavy whipping cream until it starts to simmer and steam
- Pour heated heavy whipping cream over the chocolate chips
- Allow to sit for 1 minute
- Using a whisk, mix until smooth
- Pour the ganache over the cooled brownies
- Allow the ganache to harden for two hours in the fridge
- Remove brownies from the fridge and lift the brownies out of the baking dish
- Drizzle the caramel sauce all over the brownies
- Cut into bars and enjoy!

Are these really to be put in a 9×13? They had a super thin layer (both top and bottom) when I poured it in. The Rolos weren’t “buried” in brownie mix. Are we to use a regular size brownie mix? (The brownie package suggests an 8×8).

Hi Sarah, the brownie mix that I used was for a 9×13 tin, however, if it says on the packet that you buy use an 8×8 I would suggest using that so you get it thick enough for the rolos to go inside.
