Cadbury Mini Egg Blondies

Delicious and easy these soft mini egg blondie cookie bars are a fantastic Easter treat for the family.

Ingredients
- 2 ½ cups flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, melted
- 1 ¼ cup brown sugar
- ½ cup white sugar
- 3 eggs
- 2 teaspoons vanilla
- 1 cup pastel baking chips
- 1 package chocolate eggs
Instructions
- Preheat oven to 350 degrees. Grease a 9x13 baking dish with nonstick cooking spray.
- In a medium bowl, combine the flour, baking powder, and salt. Whisk until combined and set aside.
- In a large bowl, add the butter, brown sugar, and white sugar. Beat until smooth and well combined.
- Beat in the eggs and vanilla.
- Slowly add the flour mixture, mixing between each addition.
- Fold in the pastel baking chips.
- Press the mixture into the prepared baking dish.
- Top with half the package of chocolate eggs.
- Bake for 25 minutes.
- After removing the blondies from the oven, press the remaining chocolate eggs into the top of the bars.
- Allow the cookie bars to cool in the pan at least two hours before cutting.
