Cadbury Mini Egg Blondies

Delicious Easter Blondie bars with chocolate chips and Cadbury's mini-Eggs

Delicious and easy these soft mini egg blondie cookie bars are a fantastic Easter treat for the family.

Prep Time 10 minutes
Cook Time 25 minutes
Cooling Time 2 hours
Total Time 2 hours 35 minutes

Ingredients

  • 2 ½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, melted
  • 1 ¼ cup brown sugar
  • ½ cup white sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 cup pastel baking chips
  • 1 package chocolate eggs

Instructions

  1. Preheat oven to 350 degrees. Grease a 9x13 baking dish with nonstick cooking spray.
  2. In a medium bowl, combine the flour, baking powder, and salt. Whisk until combined and set aside.
  3. In a large bowl, add the butter, brown sugar, and white sugar. Beat until smooth and well combined.
  4. Beat in the eggs and vanilla.
  5. Slowly add the flour mixture, mixing between each addition.
  6. Fold in the pastel baking chips.
  7. Press the mixture into the prepared baking dish.
  8. Top with half the package of chocolate eggs.
  9. Bake for 25 minutes.
  10. After removing the blondies from the oven, press the remaining chocolate eggs into the top of the bars.
  11. Allow the cookie bars to cool in the pan at least two hours before cutting.
