Delicious and Yummy Egg Salad for Easter Brunch
With all of our egg decorating in preparation for Easter we have just a few hard-boiled eggs left over.
So instead of just using them in a sandwich, or making some Deviled Eggs, we decided to try a delicious Egg Salad Recipe.
So here it is our Easy Delicious, Yummy Egg Salad perfect for using up the hard-boiled eggs from Easter Egg Decorating.

EGG SALAD WITH SALAD CREAM OR MAYONNAISE
This recipe calls for mayonnaise, now I made it with this with the first set of eggs we had but because my youngest much prefers salad cream I switch out my Hellmans for some Heinz Salad Cream.


So although you can make this with mayo don’t worry it also got a thumbs up with salad cream from at least one of the kids.
When we made it with salad cream instead of mayo because of the vinegar content I halved the juice we added from the pickle jar.
Easy Egg Salad for an Easter Appetizer


Delicious and easy recipe for egg salad ideal for Easter Brunch using the hard-boiled eggs you have decorated with the kids.
Ingredients
- 6 hard-boiled eggs shelled
- 4 tablespoons mayonnaise
- 1 tablespoon juice from pickled gherkins
- 1 teaspoon english mustard
- ½ teaspoon powdered mustard
- freshly ground salt and pepper to taste
- ¼ teaspoon onion powder
- ¼ teaspoon smoked paprika
- 4 unsmoked back bacon chopped
Instructions
- Chop the hard-boiled eggs and place them in a large bowl.
- Add the mayonnaise, pickle gherkin juice, mustard, powdered mustard, salt, pepper, onion powder, and paprika to the boil.
- Stir to combine the eggs and dressing.
- Gently mix in the chopped bacon until combined.
- Place in the fridge until you are ready to serve.
