Carrot Cake Waffles for Easter Breakfast
One of our favourite ways to celebrate the holidays is with fun waffles for breakfast. Easter is no exception and this carrot cake waffle is ideal for our little Easter bunnies to enjoy. The kids love carrot cake so it was a no-brainer to put together the ingredients for these tasty waffles. So here you go our carrot cake waffle recipe ideal for spring and Easter breakfasts.

Easter Breakfast Waffles
On Easter Sunday, with all of the chocolate around it’s so nice to start the morning with something that feels a little healthier and our Easter Breakfast Waffles are tasty, great to fill those bellies before we head off for an Easter Egg Hunt.

We love to serve it with whipped butter and then sprinkle with nuts and dried fruit as well as lots of maple syrup. The whipped butter has honey and cinnamon which is the perfect accompaniment to the carrot cake taste and a nice alternative to our normal cream cheese glaze (see our cinnamon roll waffles for the cream cheese glaze if you fancy that instead, it works just as well).

Once we’ve got the whipped butter on top it’s a sprinkle of walnuts and raisins and then LOTS and LOTS of maple syrup poured on top.

Carrot Cake Waffles Recipe

A tasty waffle recipe ideal for your Easter breakfast or brunch. This carrot cake waffle served with whipped butter, nuts dried fruit and maple syrup is ideal to fill your families bellies before an egg hunt.
Ingredients
For Waffles
- 2 cups flour
- ¼ cup sugar
- 4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- ½ teaspoon allspice
- ½ teaspoon salt
- 1 ½ cups milk
- 2 eggs
- 1 teaspoon vanilla
- 6 tablespoons butter, melted and cooled slightly
- 1 cup grated carrots
For the whipped butter:
- ¼ cup butter, room temperature
- 2 tablespoons heavy whipping cream
- 1 tablespoon honey
- ½ teaspoon cinnamon
- Walnuts, raisins, and maple syrup for topping
Instructions
- Preheat the waffle iron.
- In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, allspice, and salt. Set aside.
- In a large bowl, beat together the milk, eggs, vanilla, and butter.
- Add the dry ingredients and stir until just combined.
- Fold in the carrots.
- Using a silicone brush lightly coat the waffle iron with some sunflower or vegetable oil and add ½ cup of batter. Cook for around five minutes or until the waffle iron stops steaming. Continue cooking until all the batter has been used.
- To make the whipped butter, beat together the butter, heavy whipping cream, honey, and cinnamon until fluffy, around five minutes.
- Top the waffles with whipped butter, waffles, raisins and maple syrup before serving.
