  • 2 (28oz) Chicken Stock
  • 3 Smoked Pork Chops These can be found at a butcher shop or high quality meat counter at
    the local grocery store.
  • 16oz split peas
  • 4 red potatoes
  • 3 large carrots
  • 3 garlic cloves
  • 1 onion
  • 2 tbsp olive oil
  • l tsp oregano
  • 1 ½ tsp salt
  • 1 tsp freshly ground black pepper

How to Cook your Smoked Pork and Split Pea Soup

1. In your large soup pot, heat a dash of olive oil and gently fry the smoked pork chops on a medium heat until they get a nice brown colour on all sides. This step is crucial for layering those deep, smoky flavours into the soup.

2. After setting the pork aside, toss in the chopped onions, potatoes, and carrots into the same pot. This is where the magic begins – as they fry, they’ll pick up all those delicious pork bits left in the pot.

3. Add minced garlic, oregano, salt, and pepper, stirring everything to ensure the vegetables are evenly coated with the spices and beautifully aromatic.

4. Pour in the chicken stock and add the split peas. Chop the pork chops into bite-size pieces and add them back into the pot. Bring to the boil, then let it simmer uncovered for about 40 minutes stirring occasionally. If it thickens too much, just add a bit of water.

Ingredients

  • 2 (28oz) Chicken Stock
  • 3 Smoked Pork Chops (These can be found at a butcher shop or high quality meat counter at the local grocer)
  • 16oz split peas
  • 4 red potatoes

  • 2 tbsp olive oil

Instructions

  1. Since smoked pork chops are already cooked, you'll just want to fry them off with a little olive oil and get that nice brown all around (top, bottom, sides). Use the soup pot to fry the pork chops so that you can build the soup flavor.
  2. Remove pork chops and set aside to cool. Chop onions, potatoes, carrots, and add then to the soup pot to fry. Add more olive oil if needed. Add in minced garlic and spices, stir and fry for 5-10 minutes.
  3. Stir in chicken stock and split peas.
  4. Cut up pork into bite size pieces. Add to soup.
  5. Bring soup to boil, then simmer uncovered for 40 minutes. Add water if soup gets too thick.
  6. Add more salt and pepper to taste.
