Easter Meringue Nests with Mini Eggs
Last year I wanted to switch up our Easter Treats and instead of our normal Chocolate Krispie Nests that I’ve made every year since the kids were little with them they asked for something different. These Meringue Nests were my first recipe using my new stand mixer and they were so simple to make adding a cream cheese frosting and some mini eggs made them perfect little Easter Meringue Nests. So here you go our full recipe.
Easter Nests with Meringue
Meringue nests are always something I have brought as until recently I didn’t have a stand mixer and the one time I tried to make them my arm ached so much and still I hadn’t achieved the stiff peaks that are needed for good meringues.

However, with my Black Friday purchase last year of a Kitchen Aid it’s ever so easy and this Easter variation is great to share with the kids and looks so spring-like and cute.

We’ve added some cream cheese filling and mini-eggs perfect for a lighter sweet treat and it looks so cute too.

Ingredients for Making Meringue Nests
- 1 cup white sugar
- 3 egg whites
- 1/3 tsp cream of tartar
How to Make your Meringue Nests
1. Preheat the oven to 225F/.

2. Pour cream of tartar into a deep bowl and add egg whites. Start whisking until a light foam appears on the surface.

3. When foam appears, add the sugar in a little at a time and beat at maximum speed until you get a fluffy and dense meringue.
4. Transfer the meringue to a piping bag fitted with a star tip (open or closed).
5. Pipe the meringue onto a silicone mat or parchment on a baking sheet. First, you need to make the bottom of the nest, and then one turn of the meringue around the edge to get the sides.

6. Put the baking sheet in the oven and dry the meringue for 1.5 hours. Do not open the oven for the first hour. After an hour, you can check the readiness of the meringue by pressing it with your finger. If it is too soft or bouncy, then continue drying for another 30-60 minutes. The drying time may depend on the wall thickness of the meringue and on its diameter.
To avoid the nest cracking let it cool down in the oven whilst you prepare the cream cheese filling.
Ingredients for Cream Cheese Filling
- 1 tsp vanilla paste
- 1/2 cup cream cheese
- 1/2 cup whipping cream
- 4 tbsp powdered sugar
How to Make your Meringue Nest Filling with Cream Cheese
1. Mix cream cheese, whipping cream, vanilla paste and powdered sugar in a bowl.

2. Beat the ingredients with a mixer until you get a fluffy thick cream.
How to Assemble your Easter Nests with Meringue
1. Fill a piping bag fitted with a star tip with the cream cheese mixture.

2. Place cream cheese in the center of each meringue nest.

3. Decorate the nests with grated chocolate, add some chocolate mini eggs in the center and there we go.

When the meringue is almost ready, make the cream cheese. Mix cream cheese, whipping cream, vanilla paste and powdered sugar in a bowl.
Beat the ingredients with a mixer until you get a fluffy thick cream.
Transfer the cream cheese to a piping bag fitted with a star tip.
Place cream cheese in the center of each meringue nest.
Decorate the nests with grated chocolate, put chocolate mini eggs in the center.
Notes
It is better to store the meringue in a dry place so that it does not become sticky. Since it contains cream, it is best to eat within two days.
