Homemade Pie Crust

I know so many people shy away from making their own pie crust, I’ve done it. I’ve bought ready-made crusts in the past as well as ready-to-roll shortcrust pastry so that I could avoid it and now I feel cheated for all of those years.

This recipe for pumpkin pie uses the easiest pie crust recipe in the world – or so I think so.

There’s no rolling out we’re just going to use our trusty stand mixer and create the pie crust dough then press it into our pie tin. That’s how easy it’s going to be.

Easy Pumpkin Pie Filling

With the pie crust made so easily, we need to make sure that the filling is just the same! We don’t want to spend hours and hours slaving over it.

Instead, this pumpkin pie filling made with canned pumpkin, store-bought spice (or if you fancy making your own here’s our favourite pumpkin pie spice recipe), and the easiest way to make a pumpkin custard ever is perfect.

Once baked, and your house is smelling amazing, it’s just a case of letting it cool and chill, adding some whipped cream, and then serving to the family to enjoy for Thanksgiving dessert before sitting down to watch the football.

Your Simple and Easy Pumpkin Pie Recipe

So how do you make it? Well just read on for our easiest pumpkin pie recipe to make from scratch.

Simple Pumpkin Pie

A delicious and easy simple pumpkin pie recipe including homemade pie crust and filling.

Prep Time 20 minutes
Cook Time 1 hour
Chilling Time 4 hours
Total Time 5 hours 20 minutes

Ingredients

Pie Crust:

  • 2 cups flour
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup butter, melted
  • ¼ cup cold water

Filling:

  • 1 15-ounce can pumpkin puree
  • 1 12-ounce can sweetened condensed milk
  • 2 eggs
  • 2 teaspoons pumpkin pie spice

To Serve

  • Whipped Cream

Instructions

  1. Preheat the oven to 425.
  2. Whisk together the flour, sugar, salt, and baking powder.
  3. Add the melted butter and use a pastry blender to combine the ingredients until crumbly.
  4. Add the cold water and stir until the dough begins to come together.
  5. Transfer the dough to the pie pan and press it into the bottom and up the sides.
  6. Bake the crust in the preheated oven for 15 minutes.
  7. While the crust is baking, whisk together the pumpkin, sweetened condensed milk, eggs, and pumpkin spice. Pour the mixture into the crust.
  8. Turn the oven down to 350 degrees and bake the pie for 45 to 50 minutes, until the custard is set.
  9. Allow the pie to chill for a minimum of 4hrs.
  10. Just before serving add some whipped cream to the edge and for each slice.

Notes

Although you can make it 5 and a 1/2 hours ahead of time, save some stress and make it a day or 2 before and refrigerate, then add the whipped cream at time of serving.
