Delicious Strawberry Pound Cake with Easy Homemade Glaze
Strawberries are in season again and the kids are begging to go to the local pick you own and get a couple of punnets but before that I wanted to make a delicious strawberry cake to share with my friends for our weekly coffee and catch up. This strawberry pound cake is amazingly delicious and one of my favourites to make as soon as the strawberries are in season.
Fresh Strawberry Cake with Glaze
The secret to making this strawberry cake really moist is that we use Greek yoghurt in it. This combined with the vegetable oil makes a cake that is particularly light and tasty. Add in the homemade strawberry glaze and it’s fantastic.
The diced strawberries within the cake add an extra flavour that makes it perfect for summer coffee mornings in the garden.
Strawberry Glaze
The strawberry glaze that we have added to the top is so simple to make, just strawberries and powdered sugar.
The strawberries need to be thoroughly smashed, something that my kids love to help with. We smash then with a fork or if the kids are feeling particularly “helpful” then they may use a potato masher.
Which ever way the smashed strawberries mean that you don’t need to add any liquid in with the powdered sugar to create the glaze. But be warned you have to resist the temptation to avoid eating the cake before the glaze has set!
Delicious Strawberry Pound Cake with Glaze Recipe
A delicious summer pound cake with strawberries and a homemade sweet tasty strawberry glaze ideal for fresh strawberries from your garden or the store.
Ingredients
Strawberry Pound Cake
- 1 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup plain greek yogurt
- 1 cup sugar
- 3 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 cup diced strawberries
Glaze
- 1/2 cup smashed strawberries
- 2 cups powdered/icing sugar
Instructions
Strawberry Pound Cake
- Preheat the oven to 350F.
- Spray a loaf pan with non-stick spray.
- In a bowl, mix together flour, baking powder, and salt.
- In a second bowl, mix the wet ingredients: greek yogurt, eggs, vanilla extract, and oil.
- Add the sugar to the wet ingredients and mix well.
- Pour the wet ingredients into the dry and stir until combined.
- Fold in the diced strawberries.
- Pour the cake batter into the 1lb loaf pan.
- Bake for 45-55 minutes or until the center comes out clean with a toothpick.
- Once baked, remove from oven to cool.
How to Make the Strawberry Glaze
- Combine the smashed strawberries and powdered sugar to form a glaze.
- Pour over the cooled pound cake.
- Allow to set before serving.
