Homemade Italian Sausage Meat

I love discovering recipes on Pinterest but with a lot of them being American it’s taken some time and chats with my American family and friends to find out the alternatives or how to make from scratch here in the UK. As some of our favourite family meals are pizza and pasta a lot of the recipes I save call for Italian Sausage.

Now a couple of times in Tesco’s I have found Italian Sausages for sale and in the summer our local butchers – a traditional Sausage Shop will serve an Italian version of their popular sausages but they aren’t easy to find.

So I’ve played around and come up with this homemade italian sausage recipe which I make and store in the freezer to use when a recipe calls for Italian Sausage.

What is Italian Sausage

As far as I have managed to work out from the many conversations Italian Sausage is a flavored sausagemeat which you can put into sausage skins but the times I’ve had it in the USA is on Pizza, in pasta or as a breakfast sausage (more like a burger than our British Sausages).

It’s flavoured with fennel and paprika as well as other herbs and spices and can be “sweet” meaning not very hot and spicy or “spicy”. This version is most definitely the sweet one although after my husband getting a Chilli Advent Calendar this year I have a feeling a lot more of our recipes in the future will have more spicy flavours in them.

Italian Sausage Meat Recipe

When a recipe calls for Italian Sausage it's difficult to find in the UK but the flavours finish a pizza or pasta perfectly. This Homemade "Sweet" Italian Sausage recipe is perfect for using in the recipes

Prep Time 10 minutes
Defrost Time 12 hours
Total Time 12 hours 10 minutes

Ingredients

  • 454 g sausage meat
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp dried basil reduce this is you are not keen on the flavour of basil
  • 1/4 tsp fennel seeds ground
  • 1/2 tsp smoked paprika
  • 1/4 tsp light brown sugar
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 3/4 tsp chilli flakes optional I used Mulato Chilli flakes these are very mild and my kids love the richness they bring

Instructions

  1. Place the ingredients in a bowl.
  2. Knead with your hands until fully combined.
  3. Divide the sausage meat in half and wrap in freezer paper to form a roll.
  4. Place in the freezer.
  5. When needed remove and defrost for 12hrs before use in the freezer.

Notes

If you are preparing in advance like we do we recommend that you freeze and then defrost in the fridge for at least 12 hours before using.
