I love this recipe as I can make it ahead the night before, cover and store it in the refrigerator, and then just pop it in the oven first thing in the morning so it’s a hassle-free breakfast.

Here are my top tips and tricks for making the perfect French toast casserole for the family.

Pick you Bread

Any bread will do but if you want the tastiest breakfast casserole then I recommend you try a Brioche or other enriched bread as these buttery slices of bread are rich and delicious. Of course, you could also go for using up sourdough, this will produce a tangier taste.

For a Crunchier Top

Do you love a crunchy top on your breakfast casserole? I do sometimes and have 2 ways that I change this recipe up a little bit – I either sprinkle on some granulated sugar before it goes in the oven or mix up 1:1 of brown sugar and some crushed walnuts and brown sugar for an even tastier crunch.

  • Stale/Day-Old Bread, cubed
  • Eggs
  • brown sugar
  • Whole Milk
  • half and half
  • Vanilla extract
  • Cinnamon
  • Maple syrup to serve

How to Make a Simple French Toast Breakfast Casserole

1. Preheat oven to 350 degrees. 

2. Grease a 9×13 baking dish.

3. Cut your bread into large cubes and place in a mixing bowl.

4. In a separate bowl, make your custard by mixing together eggs, milk, half and half, brown sugar, cinnamon, and vanilla extract.

5. Once mixed, pour over the bread cubes.

6. Mix together the bread and custard until everything is well incorporated.

7. Place your bread in the pan evenly in the 9×13 pan. If you are making ahead then cover with plastic wrap and refrigerate overnight then bring out in the morning and proceed to the next step.

  • 2/3 cup brown sugar
  • 1 cup Whole Milk

  • 2 tsp Vanilla extract
  • 2 tsp Cinnamon
  • Maple syrup to serve
