Blueberry Waffle Breakfast Casserole
We made our blueberry waffles the other weekend and true to form one of the kids decided that they no longer like blueberry waffles so we had loads leftover – yes I could have frozen then. But inspired by our Blueberry French Toast Breakfast Casserole I decided it would be fantastic to use them in breakfast casserole and it was delicious so now it’s got the thumbs up (yes even from the one that no longer blueberry waffles) I wanted to share our delicious blueberry waffle breakfast casserole ideal if you double up the waffle recipe.

Although the first time I made this we used the leftover blueberry waffles in the recipe (and it does make them extra blueberry) we’ve since made them with our easy breakfast waffles recipe too and they tasted just as good.

Of course, you can use store bought waffles if you don’t want to make your own or you don’t have a waffle iron. They are good, but they really don’t compare to home cooked fresh waffles.

Make Ahead Delicious Blueberry Waffle Breakfast Casserole

A delicious and tasty make-ahead overnight breakfast casserole with homemade waffles and frozen or fresh blueberries.
Ingredients
- 6 Belgian waffles, cut into bite-size pieces
- 2 cups half and half
- 5 eggs
- 3 tablespoons sugar
- 1 teaspoon cinnamon
- 1 cup frozen blueberries
Instructions
- Spread the waffles in an even layer in a casserole dish.
- Beat together the half and half, eggs, sugar, and cinnamon until well combined. Pour the mixture over the waffles.
- Cover the dish and chill for at least 8 hours overnight is even better.
- When ready to bake, preheat the oven to 350 degrees. Remove the cover and sprinkle the frozen blueberries over the top of the waffles.
- Bake for 50 to 60 minutes, until the custard is set.
- Allow to rest for 5 to 10 minutes before serving.
