Sausage Egg and Cheese Breakfast Casserole

On a chilly morning there is nothing better than filling up on a warm breakfast, and this delicious Breakfast Casserole is perfect. It does take a while to cook but it’s worth the wait so I tend to leave this to the holidays or weekend when breakfast isn’t quiet as rushed. As a firm favourite of the family I really wanted to share it with you so here you go our Sausage, Egg and Cheddar Cheese Breakfast Casserole recipe.

Italian Sausagemeat Breakfast Casserole

When we make this we either use some good old English pork sausage or some of our homemade Italian Sausagemeat. Both are really tasty but the Italian sausage adds a little extra to the dish and gives you added warmth with the light spices included in it.

The eggs and milk over the potatoes and sausage makes this really fluffy almost like an omlet. We sprinkle it with cheddar cheese and save a little aside to be sprinkled on at the end so that we can get a delicious melted cheese top to the casserole.

Although we’ve called this sausage, egg and cheese casserole a breakfast dish you could easily serve it as breakfast for dinner and I’m sure the kids would love it too.

Sausage, Egg and Cheese Breakfast Casserole

A deliciously fluffy breakfast casserole with Italian sausage and cheddar cheese. A cosy meal to start the day.

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 3 large potatoes, peeled and diced
  • 1 pound ground Italian sausage
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon pepper, divided
  • 1 ½ cups milk
  • 8 eggs

Instructions

  1. Preheat the oven to 375F degrees and prepare a baking dish by greasing it with nonstick cooking spray.
  2. Place the diced potatoes in a colander and rinse with cold water until the water runs clear. Allow to drain while you prepare the remaining ingredients.diced potatoes in a green colander on a table
  3. Brown the ground sausage in a large skillet.browned italian sausage in a frying pan
  4. When the sausage is cooked through, add the potatoes. Season with half the salt and half the pepper.seasoned diced potatoes on top of browned italian sausage
  5. Add one cup of shredded cheese.shredded cheddar added to potatoes and italian sausage in a pan
  6. Stir the ingredients to combine, then pour into the prepared baking dish.
  7. In a medium bowl, whisk together the milk and eggs. Pour the egg mixture over the top of the potato mixture, making sure to cover all the ingredients in the baking dish.sausage breakfast casserole in a casserole dish ready to go in the oven
  8. Place in the preheated oven and bake for 45 to 50 minutes.
  9. Remove the dish from the oven and top with the remaining cheese. Bake another 10 minutes, until the cheese is melted and the potatoes are tender.cheddar cheese added to the top of a breakfast casserole ready to be melted

Notes

If you can't get hold of ground Italian Sausage then our Italian Sausage recipe is easy to make and tastes delicious in this breakfast casserole.
