Make-Ahead Mixed Berry French Toast Breakfast Casserole
If you are looking for an easy and delicious breakfast especially for those with a sweet tooth for the holidays or lazy weekend mornings then this easy breakfast casserole which can be made ahead is ideal. With frozen berries of any sort you like (we used a mixed berry bag), you can make it the night before and just cook for breakfast in the morning. Mixed Berry Breakfast Casserole
This breakfast casserole is full of delicious mixed berries and because they are frozen you can use any blend that you love.


The bag we buy from the supermarket is a mixture of frozen raspberries, blackberries, strawberries, and blueberries, but I’ve also made it with a summer berry mix meant for smoothies and it’s been equally as delicious.
Make-Ahead French Toast and Berry Casserole
Because you’re going to make it the night before you don’t have to worry about defrosting the berries before cooking, they are going to do that themselves in the refrigerator.


We’re made this recipe dairy-free (does include eggs) as we had a friend visiting who was dairy intolerant and they loved it, but I’ve equally made it with dairy milk and butter and it’s tasted just as nice.

Tips for Making the Berry French Toast Breakfast Casserole
A few quick tips for making it.


1. Grease your baking pan
I use a silicone brush and some cooking oil to lightly grease our baking pans but if you normally use cooking spray then this works just as well.
2. A minimum of 6 hours sitting
You're going to need to give it around 6hours minimum in the fridge. However, overnight is best and on Christmas Eve I tend to make it after dinner before we sit down for a family movie.
3. Cold Oven
I have learnt the hard way that it's best to put this dish from the fridge into a cold oven and then switch the heat on. It's no fun cleaning up smashed pans and ruined breakfast on Christmas morning!


4. Cover to Cook
You're going to want to cover it to cook, it's going to be in there for around 45 minutes but for 35 minutes of that the foil cover is on to prevent it burning.
5. Remove the Cover to Brown
Anaemic food isn't good so it is important that 35 minutes into the baking you remove the foil and let the top turn to a golden brown.

On Christmas morning alongside our crockpot blueberry french toast casserole and Christmas Breakfast casserole, this gets switched on after the stockings are open.


I then have enough time to shower and get dressed for the day to then get downstairs and uncover and brown the casserole and get breakfast ready for the family.


How to Make a Frozen Berry Breakfast Casserole

Make-Ahead Frozen Berry French Toast Breakfast Casserole


A delicious make-ahead breakfast casserole for the holidays and weekends with frozen berries and dairy-free
Ingredients
- 14 oz French bread, cut into 1-inch cubes
- 1 banana, overripe
- 1 cup almond milk
- 3 eggs
- 3 egg whites
- 2 tbsp maple syrup
- 1 tbsp vanilla extract
- 2 tsp ground cinnamon
- 6 oz frozen mixed berries
- 2 tbsp brown sugar
- 2 tbsp vegan butter
Instructions
- Arrange bread cubes in a 9x13 greased baking dish.
- In a bowl, mash the banana with a fork then whisk in the milk, eggs, egg whites, maple syrup, vanilla, and cinnamon until well combined.
- Pour the mixture over the bread crumbs, coating as many as possible, toss the mixture to coat if needed.
- Sprinkle the berries over the bread mixture.
- Cover with foil and chill in the refrigerator for at least 6 hours, up to overnight.
- When ready to bake, combine the butter and brown sugar in a bowl until it forms a paste.
- Remove foil covering from the baking dish and put dollops of the sugar mixture all around the top of the casserole.
- Recover and place in a cold oven.
- Set the temperature to 375 and bake for 35 minutes.
- When the alarm goes remove the foil and bake for another 10 minutes, until golden brown.
