Cinnamon Roll Breakfast Casserole

I love making this casserole on Christmas morning as the whole house is then infused with the smell of cinnamon rolls for the rest of the day.

The crumb topping finished off with the cinnamon roll icing from the packet makes this such a simple recipe to do and with the mixer to help it’s so quick.

I love the way that it all comes together and it’s perfect for holidays and when we have friends and family staying as it wows them. It’s just a few minutes to prepare, then 30 minutes in the oven and let it cool and rest before serving to the family.

Why not just the cinnamon rolls for breakfast? What I have found as a mom to 2 busy kids is that although cinnamon rolls are great they just don’t seem to fill them up. Switching it up and making it as a breakfast casserole fills them up all the way to lunch and they love it.

The crumble topping that we make in the mixer adds a little crunch to it if you wanted you could add in your favorite nut chopped up for a little bit of bite, walnuts or pecans would work really well.

How to Make a Cinnamon Bun Casserole

So Hey Mom! How do I make a cinnamon roll breakfast casserole? Well, it’s really easy just follow the recipe below with your favorite cinnamon rolls.

Delicious Cinnamon Roll Breakfast Casserole

A delicious, easy cinnamon roll casserole with a cinnamon crumble topping perfect for holiday breakfast and lazy Sunday mornings.

Prep Time 10 minutes
Cook Time 30 minutes
Resting Time 15 minutes
Total Time 55 minutes

Ingredients

For the Casserole

  • ¼ cup butter, melted
  • 2 batches cinnamon rolls, cut into quarters
  • 6 eggs
  • ½ cup heavy cream
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla

For the topping

  • 2 tablespoons butter, cold
  • ¼ cup flour
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • 1 batch cinnamon roll icing

Instructions

  1. Preheat oven to 350 degrees. Pour the melted butter into the bottom of a 9x13 baking dish.
  2. Spread the cinnamon roll pieces evenly over the top of the butter.
  3. In a large bowl, beat together the eggs, heavy cream, cinnamon, and vanilla until smooth and well combined. Pour over the top of the cinnamon rolls.

To make the topping

  1. Combine the butter and flour with a pastry blender or fork until the mixture resembles coarse sand.
  2. Stir in the brown sugar and cinnamon.
  3. Sprinkle over the top of the cinnamon rolls.
  4. Bake in the preheated oven for 25 to 30 minutes, until the center of the casserole is set.
  5. Allow to rest for 15 minutes, then drizzle the cinnamon roll icing over the top of the casserole before serving.
