Make Ahead Christmas Morning Breakfast Casserole

I made this last year the night before and popped it in the oven on Christmas holiday morning and everyone loved it! This easy breakfast idea is perfect to make ahead for the holidays. Make Ahead Christmas Breakfast Casserole
If your house is anything like ours on Christmas morning it’s an early start and I can tell you I don’t want to be messing around chopping, mixing and layering food for a casserole. Instead, I make this on Christmas Eve night and place it in the refrigerator overnight and then take it out and pop it in the oven on Christmas day.


I also put the ingredients in the crockpot for our French toast and blueberry breakfast casserole so that there is a savoury and sweet option for Christmas morning especially when we have all the family together.


On Christmas morning the timer switches on the crock pot about 4am and then at about 6:30 I come down and get the casserole out of the fridge and start it cooking.


That means that just before 8am we can sit down and enjoy our breakfast together.

Christmas Breakfast Casserole Ingredients
This is delicious, it's inspired by my sausage, egg and cheese breakfast casserole but to give it a festive flair I've added some red and green sweet peppers and used frozen diced potatoes to save a little time.


- 1 package breakfast sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups shredded cheddar cheese
- 1 package frozen diced potatoes
- 6 medium eggs
- 1 ½ cups milk
- Salt and pepper
If I have time I sometimes use my homemade Italian Sausage in the recipe as it adds a little bit of spice to it that my father-in-law loves.
Easy Make Ahead Christmas Breakfast Casserole
This recipe is going to take you about 15 minutes to make. So it's quick and easy. You're going to need a 9x13inch baking dish. I love my pyrex one and because it's glass you can really see the holiday colors of the peppers once cooked.


I start with a potato and pepper layer at the bottom - this makes it a lot easier to slice and serve the casserole than the sausage layer. Then sprinkle with some cheese that will melt in.


After it's the sausage layer which will peek through the egg mixture when cooked and brown nicely and a sprinkle of cheese to top it all off.

Make Ahead Breakfast Casserole for Christmas Day


A delicious savoury breakfast casserole to make ahead for Christmas day morning dotted with green and red bell peppers for some festive cheer.
Ingredients
- 1 16-ounce package breakfast sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups shredded cheddar jack cheese
- 1 32-ounce package frozen diced potatoes
- 6 eggs
- 1 ½ cups milk
- Salt and pepper
Instructions
- Grease a 9x13 baking dish.
- Brown the breakfast sausage in a large skillet with half the red and green bell peppers. When cooked through, remove from heat and set aside.
- Combine the frozen diced potatoes and the remaining bell peppers. Spread in an even layer in the bottom of the baking dish. Season with salt and pepper.
- Top with half the cheese, then spread the sausage mixture over the top. Sprinkle the remaining cheese over the top of the meat.
- In a large bowl, whisk together the eggs and milk. Season with salt and pepper. Stir then pour over the top of the casserole.
- Cover and refrigerate overnight.
- Preheat oven to 350 F degrees.
- Bake in the preheated oven for 55 minutes, then remove the cover and bake for an additional 10 to 20
minutes until the egg is set.
Notes
If you wish to make on the morning then preheat the oven Step 7 from the start.
