We love cinnamon rolls here, whether they are out of a packet or made from scratch they are only second to waffles as our favourite breakfast recipe to enjoy as a family. These cinnamon rolls use no yeast and are ever so tasty and fluffy. So here you go our buttermilk yeast-free cinnamon roll recipe ideal for breakfast.

Yeast-Free Cinnamon Rolls

I don’t know about you but during lockdown it was next to impossible to purchase yeast in the super market so we had to get inventive and bake with bicarbonate of soda and baking powder.

These cinnamon rolls were one of our favourite recipes and were great for eating as is but also for making the kids favourite cinnamon roll waffles or using in our cinnamon roll casserole.

They are so simple to make and because no yeast is used they are also much much quicker to rise too.

Easy Homemade Cinnamon Rolls (Yeast Free)

A delicious, quick and easy cinnamon roll recipe for breakfast ready in under an hour and using no yeast.

Prep Time 20 minutes
Cook Time 25 minutes
Total Time 45 minutes

Ingredients

Ingredients:

  • 2 ½ cups flour
  • ¼ cup sugar
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 ¼ teaspoons baking powder
  • 1 ¼ cups buttermilk
  • 2 tablespoons oil

For the Filling:

  • 3 tablespoons butter, melted
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 tablespoon cinnamon

For the Icing:

  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 425 degrees and prepare a 9-inch round pan by greasing with nonstick cooking spray.
  2. In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  3. Add the buttermilk and oil and stir to combine.
  4. When a soft dough begins to form, turn the dough out onto a floured surface and knead until no longer sticky, adding more flour as needed.
  5. Generously flour a flat surface and roll out the dough into a large rectangle around ¼ inch thick.
  6. Brush the dough with butter, reserving around 1 tablespoon of butter for the topping.
  7. In a medium bowl, combine the sugar, brown sugar, and cinnamon.
  8. Sprinkle the mixture evenly over the top of the butter.
  9. Beginning at one end, roll the dough up into a log, using a pastry scraper to help roll the dough and keep it from sticking.
  10. When the doll is rolled, use the scraper to cut the log into eight even slices.
  11. Place each slice in the prepared baking pan and brush with the remaining butter.
  12. Bake in the preheated oven for 20 to 25 minutes, until the tops of the rolls are golden brown.
  13. While the cinnamon rolls are baking, prepare the icing by whisking together the powdered sugar, vanilla, and milk until smooth.
  14. Spoon the icing mixture over the warm cinnamon rolls immediately after removing them from the oven.cinnamon rolls in a pan with sticky icing over the top
  15. Allow the rolls to cool slightly before serving.
