Breakfast Blueberry Pancake Muffins
One of my kids loves blueberries, they will eat them raw and cooked.

It's one of their favourite things for breakfast!
So these blueberry pancake muffins are ideal.
The other loves chocolate chips!

So splitting the blueberries and chocolate chips into half each makes perfect sense.
You can of course double either the blueberries or chocolate chips and make just one type of easy breakfast muffins.

The batter takes just 10 minutes to mix and 15 minutes in the oven and they have fresh muffins for breakfast.

Easy and Quick Blueberry & Choc Chip Pancake Muffins for Breakfast
Quick and easy breakfast recipe for kids these delicious blueberries and chocolate chip pancake muffins are ready in under 30 minutes and perfect for eating on the go.
Ingredients
- 1 cup flour
- 2 tablespoon sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 tablespoon maple syrup
- 1 egg
- 1/3 cup mini chocolate chips
- 1/3 cup blueberries
Instructions
Preheat oven to 350 degrees and prepare a muffin pan by greasing with nonstick cooking spray.
In a large bowl, whisk together the flour, sugar, baking powder and salt.
Make a well in the dry ingredients and add the milk, oil, maple syrup, and egg. Mix until just combined.
Spoon the batter in the prepared muffin pan, filling each cup halfway full.
Sprinkle mini chocolate chips into half the muffins and add blueberries to the remaining half.
Bake in the preheated oven for 15 to 18 minutes, until a toothpick inserted in the center of the muffins comes out clean.
