Nothing beats pancakes in the morning! But, when we make them there’s always so much washing up which as we’re in a hurry usually gets left till after the school run.

However, these quick and easy breakfast pancake muffins solve the problem and give the eldest a delicious school morning breakfast that when he’s running late he can take to the bus stop.

So here you go and easy breakfast recipe for kids that can be made in under 30 minutes for a delicious breakfast treat for school days.

Breakfast Blueberry Pancake Muffins

One of my kids loves blueberries, they will eat them raw and cooked.

It’s one of their favourite things for breakfast!

So these blueberry pancake muffins are ideal.

The other loves chocolate chips!

So splitting the blueberries and chocolate chips into half each makes perfect sense.


You can of course double either the blueberries or chocolate chips and make just one type of easy breakfast muffins.

The batter takes just 10 minutes to mix and 15 minutes in the oven and they have fresh muffins for breakfast.

Easy and Quick Blueberry & Choc Chip Pancake Muffins for Breakfast

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Quick and easy breakfast recipe for kids these delicious blueberries and chocolate chip pancake muffins are ready in under 30 minutes and perfect for eating on the go.


  • 1 cup flour
  • 2 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon maple syrup
  • 1 egg
  • 1/3 cup mini chocolate chips
  • 1/3 cup blueberries


Preheat oven to 350 degrees and prepare a muffin pan by greasing with nonstick cooking spray.

Make a well in the dry ingredients and add the milk, oil, maple syrup, and egg. Mix until just combined.making pancake batter adding in the liquid ingredients
