Chocolate Chip Pancake Muffins
I love chocolate chip muffins, but they take a while to make. Pancake muffins from scratch are quick and easy to make, so they’re one of my favorite breakfast recipes for busy mornings.


I’ve used mini chocolate chips in this mixture which gives more chocolate than the larger chocolate chips and buttons I have in the cupboard.

Blueberry Pancake Muffins Recipe
What is great about this pancake muffin recipe is that it can be easily adapted. My youngest loves fresh and frozen blueberries so sometimes we switch out the chocolate chips and make this a blueberry pancake muffin instead.


In the video below you’ll see that I’ve made half the muffin pan blueberry and the other half chocolate chip perfect for both my kids to share.
Blueberry and Chocolate Chip Pancake Recipe
This recipe can be made with a pancake mix but I’ve found it’s much cheaper to make them from scratch. You can make the batter for pancakes the night before and store it in the fridge. On the other hand, you can use leftover batter from homemade pancakes and freeze it to reheat on a busy school morning.


Once you have your batter made or brought to room temperature it’s just spoon the batter into your muffin tins and 15 minutes in a preheated oven and you have a healthy breakfast (well ish!) for the kids to grab as they go.

Easy and Quick Blueberry & Choc Chip Pancake Muffins for Breakfast


Quick and easy breakfast recipe for kids these delicious blueberries and chocolate chip pancake muffins are ready in under 30 minutes and perfect for eating on the go.
Ingredients
- 1 cup flour
- 2 tablespoon sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 tablespoon maple syrup
- 1 egg
- 1/3 cup mini chocolate chips
- 1/3 cup blueberries
Instructions
Preheat oven to 350 degrees and prepare a muffin pan by greasing with nonstick cooking spray.
In a large bowl, whisk together the flour, sugar, baking powder and salt.
Make a well in the dry ingredients and add the milk, oil, maple syrup, and egg. Mix until just combined.
Spoon the batter in the prepared muffin pan, filling each cup halfway full.
Sprinkle mini chocolate chips into half the muffins and add blueberries to the remaining half.
Bake in the preheated oven for 15 to 18 minutes, until a toothpick inserted in the center of the muffins comes out clean.
