Hashbrown Breakfast Muffins for School Mornings
My kids are getting ready to head back to school and I’m trying to come up with some fantastic easy kids breakfast ideas for school mornings as both have now gone off cereal. These simple savoury “muffins” are great to fill them up all the way to lunch. So here you go our easy school morning breakfast recipe for some hash brown muffins.

Many school mornings it’s a “grab and go” breakfast on the way to the bus stop for the kids and things that can be handheld are ideal.


Muffins are great that way and when I know that they have a busy day with sports or clubs then savoury is the way to go to keep them filled up till lunchtime and beyond.


These hashbrown muffins take just 10 minutes to throw together and then I cook them whilst I shower ready to hand out as the kids make their way downstairs. It surprises me how quickly they disappear and if I’m left with a few after they have left I am surprised.

These hashbrown muffins are a mix of bacon and cheese as well as hashbrowns. Mixed with eggs they then hold their shape and make the perfect breakfast for school mornings.


Tips to Make your School Breakfast Muffins Easier
To make it easier in the morning, and great for adding to salads and baked potatoes for lunch and dinner too. I batch cook some bacon on the weekend, drain the grease let it cool, and break up. Then place in an airtight container in the fridge and bring out as wanted.


It makes it really easy to prepare these without having to cook the bacon first thing on a morning and as we use frozen hashbrowns it doesn’t matter that it is cold.


I also shred the hashbrowns in the food processor and then store them in the freezer and bring them out as needed as well (once you make this a couple of times you’ll learn how much of your bowl is full of each ingredient and can throw it together in no time).

Hashbrown Breakfast Muffins for School Mornings
Easy and delicious back to school breakfast muffins with hashbrowns, bacon and cheese that will keep the kids full up till lunch.
Ingredients
- 2 cups frozen shredded hash browns
- 1 cup shredded cheddar jack cheese
- 6 strips bacon, cooked and chopped
- 6 eggs
- ½ cup milk
- Salt and pepper
Instructions
- Preheat the oven to 400 degrees and grease a muffin pan with nonstick cooking spray.
- In a large bowl, add the hash browns, shredded cheese, and chopped bacon. Season with salt and pepper and stir to combine.
- Fill each muffin cup with the hashbrown mixture.
- Add the eggs and milk to the bowl. Season with salt and pepper and whisk until smooth.
- Add around ¼ cup of egg mixture to each muffin cup, pouring the mixture over the top of the hash
browns. - Bake in the preheated oven for 30 minutes, until the muffins are set. Allow to cool for a few minutes in the pan, then serve immediately.
