Mixed Berry and Banana Breakfast Casserole
This is such a simple breakfast or brunch casserole to make my family loves the burst of flavour that you get with the berries. Here’s why we love it!
It’s dairy-free, yes we use eggs so not vegan but with almond milk and vegan butter it’s the perfect breakfast casserole for when our dairy free friends come and visit.
The bananas and maple syrup add a natural sweetness to the mix, so a lot less sugar is added than some of our breakfast casseroles.
It’s so simple to prep and cook on the morning. I do everything the night before, cover in foil, place it in the fridge and then on the morning before I shower get it out and put into a cold over to cook for 30 minutes, under cover it and then let it brown off for a bit. Every so easy!

Bread Selection
The types of bread that you pick for the casserole will make a difference this recipe lends itself to using a day-old French bread works wonders, absorbing the custard mix just right without getting overly mushy.
Picking your Berries
While frozen mixed berries are handy and delicious, feel free to swap them out for fresh berries when in season for a burst of fresh flavor. We love using fresh blueberries and making this a blueberry banana French toast instead of a frozen berry version.

Soaking your Bread
After pouring the custard over the top of the bread, gently press down the bread with a spatula to ensure every piece is soaked in the mixture.
We’re made this recipe dairy-free (does include eggs) as we had a friend visiting who was dairy intolerant and they loved it, but I’ve equally made it with dairy milk and butter and it’s tasted just as nice.

- French bread, cut into 1-inch cubes
- banana, overripe
- almond milk
- eggs
- egg whites
- maple syrup
- vanilla extract
- ground cinnamon
- frozen mixed berries
- brown sugar
- vegan butter
Step by Step Instructions for Making this Delicious Berry French Toast Breakfast Casserole
1. Arrange bread cubes in a 9×13 greased casserole dish.

2. In a bowl, mash the banana with a fork then whisk in the milk, eggs, egg whites, maple syrup, vanilla, and cinnamon until well combined.
3. Pour the mixture over the bread crumbs, coating as many as possible, toss the mixture to coat if needed.

4. Sprinkle the berries over the bread mixture.
5. Cover with foil and chill in the refrigerator for at least 6 hours, up to overnight.
6. When ready to bake, combine the butter and brown sugar in a bowl until it forms a paste.

7. Remove foil covering from the baking dish and put dollops of the sugar mixture all around the top of the casserole.
8. Recover and place in a cold oven. Set the temperature to 375 and bake for 35 minutes.
9. When the alarm goes remove the foil and bake for another 10 minutes, until golden brown. You can serve this with some powdered sugar sprinkled on top for those that have an extra sweet tooth.
