Grab-and-go breakfasts are the main staple of our week day mornings here in the Hey Mom! house and these easy breakfast hash brown and egg muffins are so quick to make. A pan can be made while I get the kids up and ready for the day ahead.


With hash browns, eggs and bacon these bake in a muffin pan cups are easy! We use frozen shredded hash browns and shredded cheese which means that we can just through it all in the muffin tins and leave it to do it’s work.


These hash brown muffins take just 10 minutes to throw together and then I cook them whilst I shower ready to hand out as the kids make their way downstairs. It surprises me how quickly they disappear and if I’m left with a few after they have left I am surprised.

Tips to Make your School Breakfast Muffins Easier
1. Cook Your Bacon Ahead of Time
That’s right, get ahead of yourself and make some cooked bacon ahead of time that you can then add already broken up to your shredded hash brown potatoes in the muffin cup.


It makes it really easy to prepare these without having to cook the bacon first thing on a morning and as we use frozen hash browns it doesn’t matter that it is cold.


Grease Muffin Tins
Whether you choose to use some cooking spray (I don’t!), oil or butter to make these easy to release when they are removed from the oven you really must do this. Yes, even if you have a non-stick pan.

Hash Brown, Bacon and Cheese Breakfast Cups


Easy and delicious back to school breakfast muffins with hash browns, bacon and cheese that will keep the kids full up till lunch.
Ingredients
- 2 cups frozen shredded hash browns
- 1 cup cheese - we've used shredded cheddar jack cheese
- 6 strips bacon, cooked and chopped
- 6 eggs
- ½ cup milk
- Salt and pepper
Instructions
- Preheat the oven to 400 degrees and grease a muffin pan with some butter or oil.
- In a large bowl, add the hash browns, shredded cheese, and chopped bacon. Season with salt and pepper and stir to combine.
- Fill each muffin cup with the hash brown mixture.
- Add eggs milk season with salt and pepper to a bowl and whisk until smooth.
- Add around ¼ cup of egg mixture to each muffin cup, pouring the mixture over the top of the hash
browns. - Bake in the preheated oven for 30 minutes, until the muffins are set. Allow to cool for a few minutes in the pan, then serve immediately.
